Like most people: I hate wasting food. And with the holidays coming up, I know we will have a huge surplus of leftovers {especially after Thanksgiving} in our home. So, Today I'll be sharing one of our go-to recipes that utilizes all those leftovers as part of a sponsored collaboration with #CollectiveBias & its advertisers. We have two picky eaters in our household, so we usually like to re-create meals they enjoy. Enchiladas is one of the meals they actually love, so we make a lot of variations of this dish {to get our kids to eat}.
Here is what I used for this recipe:
We had some cooked turkey cutlets we needed to use up so, I popped it in the food processor {with a handful of cilantro & onions} to make it the perfect texture & flavor for the enchiladas.
I warmed the tortillas on the stove with a tsp of oil & then filled them with turkey, Kraft's turkey stuffing mix, bell peppers, & topped it with Kraft shredded cheese.
Then rolled them up & poured enchilada sauce over the tortillas. Then stuck it in a pre-heated 350° oven for 8-10 mins.
Then take it out, to top it with a generous amount of cheese, cilantro & onions and bake until cheese has melted.
Then dish it up & enjoy!
The stuffing in these enchiladas is such a great addition to this recipe! But, I happen to love stuffing{so, I'm totally bias}. These enchiladas are so easy to whip up & so tasty! Since, we did these for the whole family, the dish had a very mild spice factor, next time I'll have to add in some red peppers to pack a little more heat & flavor.
This recipe would also go really well in tamales{definitely for next time}.

Turkey & stuffing Enchiladas
INGREDIENTS:
- 1 Box of Prepared Stove Top Stuffing
- 4-5 cooked Turkey breast cutlets
- 1 Cup Kraft Shredded Mexican Cheese
- 2 Bell peppers
- 1 white onion
- Cilantro{About a cup}
- Tortillas
- 2 cans of Tomato sauce
- Knorr Chicken seasoning
DIRECTIONS:
- Preheat the oven to 350*.
- Make the stuffing according to the box instructions, set aside.
- Shred turkey in food processor & add 1/4 Cup onion & cilantro.
- Add a tsp of oil to a pan & warm tortillas{5-10 seconds just to make them soft}
- Fill the tortillas with turkey, stuffing, cheese, cilantro & bell peppers & roll up & place in baking dish.
- For the Enchilada sauce: Blend 2 small cans of tomato sauce, 1 tortilla, 1/2 tsp Knorr chicken seasoning, 1/4 cup cilantro, 1/4 cup onion in a blender {for 30 secs} then pour it over the rolled up tortillas.
- Bake for 8-10 minutes.
- Remove from oven & top with cheese .
- Continue baking for 5 minutes or until the cheese is fully melted.
- Serve & enjoy!
